A New Dining Experience at Coffman Union
The University of Minnesota wanted to provide their students with dining services that offered a wide-variety of food venues. Ryan constructed three distinct areas within the University’s Coffman Memorial Student Union where students would have access to a multiple of food and beverage options: the main dining area called Minnesota Market Place which includes six food kiosks including Baja Tortilla Grill, Bene Pizza, Cranberry Farms, Chick-Fil-A, Einstein Brothers’ Bagels and Grab-n-Go Food; a Starbuck’s Coffee shop; as well as a deli store where students can purchase fresh soups and sandwiches.

The Union’s Dining Services provides over 3,000 meals per day. It also includes a catering division that not only caters events on-site, but provides catering services throughout the University of Minnesota, which spans three different campuses.
